<p>The first thing you want to do is gather all of your ingredients</p>
<p>Cupcake Batter:</p>
<p>- 1 box of strawberry cake mix<br />
- 1/3 cup applesauce<br />
- 1 cup water<br />
- 3 eggs</p>
<p>Cupcake Frosting:</p>
<p>- Cheesecake flavored pudding<br />
- 1 cup Milk<br />
- 1 container of cool whip<br />
- Fresh strawberries</p>

<p><em><strong>Directions:</strong></em></p>
<p>I wanted to make my cupcakes on the &#8220;lighter&#8221; side so instead of using oil in the recipe I substituted it for the applesauce. Place all the cake batter ingredients from above and mix together using an electric mixer until well blended. Preheat oven to 350 degrees, and place liners inside your cupcake pan. Fill the liners 2/3rds full and allow them to bake for about 16 &#8211; 20 minutes. <em><strong>Creating the frosting:</strong></em><br/>Place one package of pudding in a large mixing bowl, add one cup of cold milk and begin to mix together on low with electric mixer. Gradually add in the cool whip and continue to mix until you get a nice consistency. Wait until your cupcakes have completely cooled and then begin to place the icing on. <p>(Makes 6 servings approx. 3/4 cup each)</p>

<p>I ended up having a pretty good fourth of July this year however, I missed seeing the fireworks. Unfortunately, it has been very dry here and so a lot of the local places cancelled our fireworks this year. However, I did attend an awesome cookout on Tuesday night at a friends house. It was great but at the same time it was a disaster. Just like any one else I find it easy to fall victim of temptation. This is why I am restarting my blog and putting a lot of energy and efforts into it. We had a lot of vodka, but it was pretty interesting because they flavored the vodka with cherries themselves so it was unique.</p>
<p>I have just really been loving my summer time this year it is the best so far, so many options and so many things to do.</p>

<p>Sometimes I just have to TREAT MYSELF to a little DQ! What better way is there to do it than to bike all the way over. At least it makes it feel like you are working some of it off. When I go to Dairy Queen I usually get a blizzard. So far one of my faves have been the Oreo CheeseQuake blizzard. However this is not a recommended snack unless you are really craving dairy queen as once I show you the nutrition facts on a SMALL you may just be blown away! Luckily I tend to share my DQ with my partner but I would really like to have the whole thing to myself because it is just too good tasting!</p>

			<content:encoded><![CDATA[<p>Until recently I was never aware of a such thing called food fraud. But, when there is a way to make money off of pretending something is one thing when it is really another food also falls in to a potential fraud category. Do you ever wonder if the meat you eat is really from grass fed cows, or are the apples you just purchased at a higher price because the label said it is organic really organic? Although the food you are buying may look the same, taste the same, smell the same, etc. as what you are familiar with, you still could be being conned.</p>
<p>The real story is there is a lot of food fraud that goes on out there and there are organizations that investigate these situations but not enough investigations occur as much as they should. Scientists are able to test food through food forensics to determine if it is really true to the label. However, as genuine Americans we tend to put our trust in the local or chain grocery store and not put much thought into who their suppliers are and if they are reputable businesses. If more of the US consumers demanded quality testing performed at the grocery store level we could really find out what is going on and then be able to back track it to the supplier who is creating the fraud.</p>

Since then I have been trying to embed more healthier habits into my daily routine. I am cutting back on the amount of carbs I am eating by maybe having one or two veggie dishes per day rather than having multiple servings of bread or rice in the same day. </p>
<p>Over the weekend I did make some amazing spaghetti squash the recipe was called spaghetti squash primavera and contained just a mixture of other veggies and I used two spaghetti squashes and it made a very good quantity. I may make a butternut squash dish next week&#8230;.lets see.</p>

During day five you are allowed to eat meat particularly beef so I made up some hamburger patties to have that. I dont know if it was just my body not having the meat for several days and then when I did have it caused me to not feel too great or maybe my portion of meat was too large. Anyhow I felt much better today and only had one serving of meat.</p>
<p>I feel it is much more difficult to stick with a diet on the weekend because my routine is all off schedule and damn do you know how many pizza commercials I saw???? However, I have stayed strong with this diet plan the entire time and I plan to bring in success. I have only one day left which is day seven and I am looking forward to being able to have some brown rice tomorrow. My sweetheart makes some awesome brown rice with veggies in it.</p>
