Dani is a young lady who is a foodie at heart. You can follow her on her blog here. She loves healthy cooking and clean eating. In today’s podcast (episode #30) she shares with us some of her favorite foods, and tells us some of her “secret swaps”. She knows the struggle is real if you do not know how to cook or hate cooking, she use to be THAT GIRL who could BURN SOUP! Yeah I know that’s pretty sad! But, she was able to learn some mad cooking skills and now she shares her secrets on healthy food substitutes.

Dani becomes a foodie and learns to cook

Dani has always had a loving relationship with food her whole life, but she was not always fond of cooking. She even referenced how she would “burn soup”. When she was on her weight-loss journey she was able to consult a nutritionist who helped guide her on making healthier eating choices. Dani wanted a lot of flavor but wanted to save on calories so she started to Google “(insert favorite food here) clean eating recipe.”

She even googles things like “Brownies Clean Eating” and was able to come up with ways to make brownies using dates. I was able to find a very similar brownie recipe over at MindBodyGreen and these brownies simply sound delicious. Another one of her favorite swaps is putting together her own clean eating mac and cheese.

As a foodie Dani learned that not everyone in your family is willing to eat food when you tell them it is “healthy”. So if you are someone who is looking to make healthy meals for yourself that your family will also enjoy, she said simply don’t tell them that you lightened up the recipe. If you don’t tell them they probably won’t even notice, but if you do tell them they might not want to touch it!


Dani’s Black Bean Muffin Recipe


  • 1 can black beans (rinsed and drained)
  • 2 large/medium eggs
  • 2Tbsp ground flaxseed
  • 3/4 Cup cocoa powder
  • 1/4 tsp himalayan salt
  • 1Tsp pure vanilla extract
  • 1/4 cup coconut palm sugar
  • 1Tsp baking soda
  • 1/2 Cup dark chocolate chips
  • 2 Dates (pitted)
  • 2Tbsp melted coconut oil


  1. Rinse and drain beans
  2. Place beans and dates into your food processor
  3. Mix in other ingredients make sure the texture is smooth but not runny or too thick
  4. Mix in chocolate chips last (do not place them in food processor
  5. Pour mixture into muffin tin (makes 12) heat oven 375 degrees Fahrenheit
  6. Bake until risen (about 15-20 mins)
